Not counting nuts and seeds, whole plant foods have far fewer calories than refined foods and animal foods. So it’s easy to burn more calories than you eat. After all, you fill up on fewer calories to begin with… about 40% fewer calories!

Now are you ready for some shocking numbers?

Whole Foods Market™ recently adapted Dr. Joel Fuhrman's nutrient scoring system. Dr. Fuhrman – regarded as one of America's leading nutritional experts – analyzed food groups and ranked them on a scale of 0-100, based on their ratio of nutrients to calories. He calls this ratio “nutrient density”. The more nutrition per calorie, the higher a food scores. Take a look:

As you can see, refined grains and oils make you carry extra weight, but give you little value in return. They fatten you up while cheating you of the nutrients in their whole food counterparts. So you wind up tired, deficient, and plagued by chronic health problems.

Animal foods aren’t quite as bad. But with scores ranging from 3 to 15, they’re not the best foods for staying nourished and fit. They contain too little nutrition per calorie. What’s more, they have no fiber. And many have dangerous amounts of cholesterol and saturated fat.

Vegetables, fruits, beans and whole grains have the highest scores (i.e. the most nutrition per calorie).

These whole plant foods also contain more fiber, bulk, and water than most animal foods and refined foods. So you can eat them until you're full, but still consume fewer calories – about 40% fewer calories!Check out these examples:

If the vegetarian diet is so healthy, why do some vegetarians struggle and give up?

So in October of 2009, I founded The Vegetarian Health Institute.
