What’s wrong with gluten?
Only about 3% of Americans have celiac disease. But gluten sensitivity is estimated to affect 30-50% of today’s population. What’s changed since 50 years ago?
Generations ago, people weren’t bothered by gluten for three reasons.
- There were different varieties of wheat that came from heirloom seeds (seeds unadulterated by modern agriculture).
- These seeds had less gluten than today’s wheat berries.
- People didn’t eat wheat three times a day. So they could tolerate the occasional irritating quality of gluten.
But the modern food industry has hybridized grains (especially wheat) to increase their gluten content. Why? Gluten is what makes bread soft and doughy.
What’s more, wheat has gone from being ONE food in a balanced diet to the #1 staple in our diets. It’s now common to eat cereal for breakfast, a sandwich for lunch, pizza or pasta for dinner, and pretzels, crackers, cookies or muffins in between.
So instead of eating different varieties of wheat occasionally, we eat a single variety (which is unnaturally high in gluten) 3-5 times per day!
Gluten is like sticky glue. The sticky property that makes bread doughy is the same property that causes irritation and inflammation in your gut.
